AND discovered some cool foil-pack recipes, too. For the recipes, go to Reynolds Wrap http://www.rmc.com/wrap and follow the links for foil packets/grilling. There are more than 50 recipes there, most of which I have never heard of! And some are vegetarian, several give the nutritional info, etc. Some sound so delicious, like Far East Chicken, Satay style Beef, and Quesadillas, that I may have to get my fireplace going to try them out! For those of you with e-mail only access, be patient, I will be putting these recipes on the District website below, soon. I will announce to the list when it is ready. Here's the technique for cooking rice in foil ========= Rice In Foil Oven Roaster Bag (medium size for 8 people) (No Ziplocks!) 2 sheets Heavy Duty Aluminum Foil, approx. 30" long (~70cm) Minute Rice (Converted type rice that is 'quick') (or regular rice, just increase cooking time) Water or chicken broth Spices of choice for flavored rice Follow directions for the number of servings you wish to make and place all ingredients in the Oven Roaster Bag. Twist loosely and seal at the top with the oven tie, leaving some air inside and a very small vent hole at the top. Make an X or cross with the sheets of foil, place the bag in the center. Gather the foil up around the oven bag, and scrunch in at the top (you are making a big, foil bag with the top gathered in). You should leave a very small vent hole. Place on the coals for about 10 minutes to get the water inside boiling well, then remove from the coals. Let it set for another 5-15 minutes, or keep warm on the side of the fire until the rest of your meal is ready. Open Carefully (Beware of steam!) and serve from the bag. This makes the easiest, best tasting rice I have ever had by a campfire, and no starchy pots! Before sealing I am going to add some dried fruit to mine! Enjoy!
