We used eight foot long 2x2 boards. Sharpen one end and wash boards. Use concrete/cinder blocks on each end to make a low wall. Adjust heat by putting blocks on end, edge or side to vary height of boards above fire. Alternate: use extra 2x2s to make an H frame to hold boards. Use heavy nails to make rungs to move cross bar up or down for heat control. Make a large bed of charcoal spread on heavy duty foil to reflect heat and minimize heat reduction due to moisture in ground. Skewer washed and salted chickens on the 2x2s. Square edges of boards will keep the chickens in place and allow you to turn them a quarter turn at a time. Push chickens tight together; secure legs and wings with heavy cotton string. Tie off every so often in case of burn through. Cook slow enough to cook through before outside is charred. The barbeque guys know this drill. Have a squirter to handle flare ups or charring of board. If chickens are tight together no wood is exposed to direct heat except at very ends. We have used this for cornish game hens too. Enjoy. If you line a fire or any heat source with brick or stone you are taking a risk. The risk of an exploding brick. Please be careful when using stones around fires. Many rocks and bricks have air pockets. When those air pockets get warm or hot they begin to expand. Upon expansion of the hot parts, the rock explodes from the pressure of the air inside. Many times, to cook chicken, we use a spit. We put the whole chicken on a rotisserie about a foot from the fire, or whatever distance is necessary. Thanks, Habib B. Subject: Re: Ziploc Omlets To: Multiple recipients of list SCOUTS-L Status: RO X-Status: My guess is that you'd want to drop the bag into boiling water to cook after first mixing into the egg your cheeze, onions, mushrooms or whatever. Zip-lock (freexer NOT storage) bags can be used to cook more than one item in water which may be unclear or unclean and yet protect the food from organizms. It is best to double bag the items. For example pasta or rice in just enough DRINKABLE water to absorb (or lesser amounts with veges, or none with sauce). Once the bag(s) is/are dropped in the boiling water, the interior water will soon reach the temperature of the surrounding water, and cook the contents. Remember, you can still overcook pasta, etc. by using this method, and if the water boils out your plastic will still melt. The same concept applies when you boil or cook in a paper utensil, however there you can even (conceptually) fry so long as the oil and food don't reach that magical temperature for burning paper - +451F. I put in the bag 2 eggs, a dollop of magarine, ground sausage (like Jimmy Dean - comes in plastic tube wrap), cheese, diced peppers, chopped tomatoes, diced onions, mushrooms, and whatever else you might have or want in it. Then I mush it all up. This breaks up the sausage and ensures that it will cook along with the eggs. The sausage, green pepper, and onions eliminates even the need to add salt and pepper. Place the bag in boiling water and wait for it to cook - cheese melts and eggs turn solid. One can eat the thing right out of the bag and throw away (pack out) the empty bag. Lick your spoon and dunk it in the boiling water and your cleanup is complete! This works great if the boys remember to buy the bags. On our last outing my New Scouts forgot the bags and we switched to the alternate egg plan. HARD BOILED. They make great handwarmers on a cold morning. Oh, by the way, the boiling water also works well to reconstitute fruit flavored oatmeal and cheese grits. You could probably warm other stuff in the pot of boiling water like raisin bagles or English muffins. Another great central core warmer is HOT TANG or lemonade. The real men ("no such thing as too strong coffee") in our troop probably think hot citrus drinks are wimpy, but it works for me. So we have made hot drinks, grits (a two syllable word in Texas), and hearty boil-in-bag omelets and all without making any mess. This could be done over a fire or on the stove. What do you think, folks, does that sound good, or what? First be sure to use one of the heavy duty (freezer) ziploc bags. Break 2-3 eggs into the bag. Remove all the air in the bag and seal it. "Moosh" the egg around to scramble it. Put the bag into a pan of boiling water. Try to keep the bag underwater and away from the sides of the pan. Cook for about 5-8 minutes, until done. Eat right out of the bag. For a variation: add some dried onion flakes and a spoonful or so of salsa to the eggs before cooking. When cooked, dump eggs onto a flour tortilla, add grated cheese and roll up.
